If you are anything like me, my children ask what the snack is before they even say hello at school pick up! I certainly don’t begrudge them some food. They have such a full day learning and exercising that they need it but I think I need to upgrade from the standard biscuits or crisps. It was something that came up in our #MyTime: Health event and our panel had some great ideas. Here are a few you can try:
- Apple and nut butter ‘sandwiches’ – slice a whole apple in half and cut rounds of apple. Spread with a nut butter of your choice.
- Smoothies (in a non see-through beaker so you can hide veg in it too!) – try banana, coconut water, strawberry, spinach, kale, courgette and oats. They can’t taste the veg, honest!
- Fruit and nut power balls – dried fruit, roasted (unsalted) nuts and a syrup (try agave/maple), whizzed up and rolled into balls. Can also roll them in desiccated coconut/ cacao powder/ more crushed nuts too.
- Rice cakes with cream cheese and ham/turkey.
- Dark Ryvita with nut butter and strawberry slices.
- Eggy ‘muffins’ – using a muffin tray lightly oil, add whatever veg/ ham/ cheese (not too much) and then top up with whisked egg. Bake for 10 mins. Do a batch and keep in the fridge for up to 3 days.
- Yoghurt pot with (homemade) granola and fruit purée or honey.
